Most of the time, like the others, it is loosely on the grip.  If I'm not in traffic, I'll rest it on my lap or dangle it to the side by my hip.  I don't trust other drivers not to do something stupid, so I keep the brake covered whenever I'm near other vehicles.

Mine just starts playing where it left off when I start the bike.  If I connect it after the bike is running I just need to (M) over to iPod and it it sees it and plays.  One thing I did notice is that there isn't a Play/Pause button on the bike controls.  The display on the iPod changes to read Triumph while it's connected.

I bought a 6th gen 16GB ipod recently for my Trophy.  Small form factor.  I have several playlists which I can scroll through and then through songs using bike controls.  The info shows on the bike display.  I think if I wanted I could go through artists/songs.  The ipod cost me $65 on an auction site.

I bought an older iPod Classic 5th gen off of eBay and did a 256gb sd card upgrade to it.  All in, about $100.  Works great with my Trophy.

I keep a 64gb usb memory stick in the usb port and it works fine.  Controls work, data is displayed on screen.  Doesn't seem to support playlists.  I have about 500 songs on the memory stick and a bunch of mp3 audiobooks.  To answer your exact question...  I've only used an old ipod and it worked fine.  I've not tried a generic mp3 player.  I could try it as I do have one laying around.  I suspect it won't interface well like the ipod as there is not really a standard interface like the ipod.

To overcome the playlist issue on the USB Stick...  I have folders that are named as playlists and all the songs are in that folder.  Then I just play that folder's songs.  Same with audiobooks.

 Yep, that is the same item.  Mine is a Kicker KISLOC and works well.  The Kicker has two small adjustable pots so that you can tune the level to your liking.  I also wanted the option of having the speakers which is why I added the switch to direct the signal to the speakers or the level converter for the earbuds.

I just wired in a Kicker Hi-to-Low level converter before the speakers.  Put a selector switch so that I can select between speakers and headphones.  Then I installed a 3.5mm headphone jack down near where the seat and tank filler trim panel meet.  I plug my earbuds into there or if I'm riding distance, I plug my Cardo g9x comm mp3 input in and get all the audio output from the triumph into my helmet.  This is much more reliable than the bluetooth from the bike.
